Wines
Chardonnay
French grape-vine spread in all the world thanks to the facility of the cultivation and wine-making. It is the base of the great white wines from Borgogna and it is used also for Champagne. In Italy it is very wide-spread to make both light and fruity flavor wines and strong and full-bodied wines and the best sparkling wines made with classic method. The great wide-spreading of this grape-wine has created a kind of “standardization” of the taste that some look unfovourably.
Malvasia
It exist in many varieties (also black) and the wines obtained aare both rich and dark wines and white smooth wines, both sweet and dry. It’s characteristic is a lightly aromatic taste.
Sangiovese
It’s the most important grape-vine of the central Italy; it is the true symbol of Tuscany. From it are made Chianti and Brunello di Montalcino. Cultivated in all the world it is famous for its violet bouquet.
Sauvignon
It is the second most important French white grape-vine after Chardonnay. It has a characteristic pleasantly herbaceous and full-bodied scent. It originates famous wines as Sancerre and Poully Fumè. In Italy is very wide-spread with good results.
Trebbiano
It is probably the most wide-spread grape-vine in Italy. It is not cousidered a high-quality grape and it is used to blend many Italian white wines. When it is wine-made using only trebbiano grapes, it originates generally genuine and simple wines, thogh in some productions it gives excellent resultsas, (for exemple trebbiano d’Abruzzo)
Olio
The Moraiolo is a variety of Olive-tree originating from Tuscany and it is wide-spread in a great part of Italy even if it is mainly in the centre of Italy. It does not feel the effects of drought and wind but it fears the effects of the water stagnation. Probably of Tuscan origin, the Leccino is one of the olive-tree cultivar the most wide-spread in Italy but its characteristics have made easier the cultivation also abroad.
Production and Oil
The production is rather constant. The average harvest of oil is 18-21 percent. The golden yellow with green reflections oil is of excellent quality, but for some people it has not aromatic peculiarity: for other people its fresh little fruity flavors presents traces of aromatics herbs (common basil, mint) chicory, lettuce, artichoke, almond.
Produzione e Olio
La produttività è piuttosto costante. Resa in olio media: 18-21%. L' olio, giallo dorato con riflessi verdi, è di ottima qualità ma, per alcuni, senza particolari picchi aromatici; dal sapore fresco, poco fruttato, leggermente amaro e piccante; alcuni vi scorgono note di erbe aromatiche (basilico, menta), cicoria, lattuga, carciofo e mandorla.
